Before first use, it is recommended to season the cooking top. Since the top is made from iron, it is subject to rusting. Some rust might even show on the new product once opened as rusting can occur with slight exposure to humiduty during storage or transport.
Therefore, it is advised to season the cooking top from time to time, especially if the SAJ has been stored for some time.
First, gently clean the top with a soap and water. Then apply a layer of olive oil, and turn it on. Let the oil burn on the surface so it would create a protecting layer for the iron.
Repeat this process as much as needed, especially after long storage times.
